General Tso's Chicken

Ingredients
1 1/2 lb boneless skinless chicken breast, cut into 1" chunks3 tbsp + 2 tsp cornstarch, divided2 cloves garlic, minced1 tbsp minced ginger1/4 cup lite soy sauce1/4 cup low sodium chicken broth1 tbsp hoisin sauce1 tsp red pepper flakes1 tbsp rice wine vinegar1 tsp chili oil1 tsp honey2 tbsp low sodium tomato pastescallions, sliced1 tbsp white sesame seeds
Directions
1. Preheat oven to 375 degrees. Lightly spray a cookie sheet with cooking spray; set aside.

2. Toss chicken with 3 tbsp corn starch and place on cookie sheet in a single layer.

3. Bake 12-15 minutes or until cooked through.

4. Meanwhile, in a medium saucepan combine garlic, ginger and chili oil, saute for 2 minutes
.

5. Add soy sauce, broth, vinegar, honey, red pepper, tomato paste and hoisin sauce. Simmer over medium for 4-5 minutes.

6. In a small bowl, dissolve 1 tsp cornstarch in ¼ cup cold water;Mix well. Add to sauce mixture, stirring constantly until thickened, about 3 - 4 minutes.

7. Toss cooked chicken with sauce and top with sesame seeds and chopped scallions. Serve immediately.
