Peach-Tomato Salad with Basil and Feta

Ingredients
1 large tomato, cored and sliced into wedges1 large peach, cut in half, pit removed and sliced into wedges2 tablespoons chopped fresh basil1 teaspoon olive oil 1 teaspoon red wine vinegar salt and pepper to taste 1 ounce crumbled reduced-fat feta
Directions
Arrange the tomatoes and peaches in a bowl and sprinkle on the basil. Drizzle on the oil and vinegar, season with salt and pepper, and add the cheese.
Serve immediately.

Serving Size: Makes 2 salads.

    I knew it be good when I had all of the ingredients. My peaches were a bit hard, my tomatoes a little too soft and I used cider vinegar with a drop of balsamic. It was delicious. Will be a go-to till the end of the season. - 8/21/13

    Made this using baby heirloom tomatoes and thai basil from the garden. Used blood orange olive oil and cranberry balsamic and served over baby greens. Had to made again the next night. Fantastic flavors.
