GrapeOla Mayonnaise - Immersion Blender Technique

Ingredients
3 large egg yolks at room temperature1/4 tsp ground mustard1 tablespon lemon juice at room temperature1/4 tsp sea salt1 cup to 1.5 cups GrapeOla Grape Seed Oil
Directions
Let the yolks and lemon juice warm to room temperature before using. In a vessel that will just fit an immersion blender, whisk the yolks, lemon juice, mustard, and salt to incorporate. Use your immersion blender on low to medium-low speed to begin emulsifying. Add a slow stream of oil, no more than 1/4 tsp per few seconds, while moving the immersion blender slowly up and down (like an oil derrick). After all the oil is incorporated, taste and season. Chill for one hour prior to first use.
