Pork Chops with Warm Apple Sauce

Ingredients
2 Golden Delicious apples, chopped1 teaspoons lemon juice1/8 cup golden raisins1/2-inch piece fresh ginger root2 teaspoons Splenda brown sugar blend1 cup Mott's Plus light apple juice1/4 teaspoon ground cinnamon1/8 teaspoon freshly grated nutmeg4 center cut boneless pork loin chops, about 1 lbSalt & pepper, to taste
Directions
1. Preheat oven to 350 degrees.

2. In a large pot over medium heat, combine the apples, lemon juice, raisins, ginger, brown sugar, apple juice, cinnamon and nutmeg. Cook until a chunky sauce forms, about 10 to 12 minutes. Once apples are soft, remove from the heat.

3. Season chops on 1 side with salt and pepper. Add chops to a baking pan that has been lightly sprayed with cooking spray, seasoned side down. Season the opposite side of the chops and bake for 1 hour, or until internal temperature reaches 155 degrees.

4. Remove chops from oven and let them rest a couple of minutes for juice to redistribute. Remove ginger from the sauce and top chops with generous portions of warm apple sauce.
