Oatmeal Sweet Potato Muffins

Ingredients
1 Cup Old Fashioned Oats1 cup Wheat flour1 tsp. Baking powder1/2 tsp. baking soda1 tsp. cinnamon1/2 tsp. nutmeg1 cup cooked mashed sweet potato3/4 cup light brown sugar1/3 cup canola oil1/4 cup skim milk1 large egg1 tsp. vanilla
Directions
Preheat oven to 400 degrees. In large bowl combine oats, flour, baking powder, baking soda, cinnamon, nutmeg. In a seperate bowl mix together sweet potato, brown sugar, oil, milk, egg, and vanilla. Stir sweet potato mixture into dry ingrediants just until moistened. Fill Muffin Tins 3/4 full. Bake 15-20 min. Makes 18 muffins.
