Ingredients
3 eggs lightly beaten 1/4 Cup canola or safflower oil 1 tbsp vanilla extract 1 cup white sugar 2 cups shredded zucchini 2 cups all purpose flour 3/4 cup each oatmeal and fiber cereal 1 tsp salt 1 tsp baking powder 1/2 baking soda 1 tbsp ground cinnamon 1 cup fresh bluberries.
Directions
use a 1/3 C measuring cup to scoop into parchment paper line muffin tins.
