Spicy Turkey and Quinoa Meatloaf

2.5 lb ground turkey1/4 c quinoa1/2 c water1 large yellow onion, diced4 cloves garlic, finely minced2 large eggs3 tsp salt2 tsp freshly ground pepper1 Tbsp grapeseed oil (or cooking oil of your preference)8 Tbsp Worcestershire sauce4 Tbsp Tapatio hot sauce4 Tbsp tomato paste2 Tbsp Siracha chili garlic sauce
1. Cook the quinoa. Combine quinoa with water and bring to boil. Reduce to simmer and cook until water is absorbed (~12 minutes).
2. Heat oil in a large frying pan. Cook onion until softened and translucent (~5 minutes). Add garlic and cook for another 3 minutes. Remove from heat.
3. In a large bowl combine; turkey, eggs, cooked quinoa, cooked onions and garlic, Tapatio hot sauce, 4 Tbsp Worcestershire sauce, 2 Tbsp tomato paste, salt and pepper. Mix well.
4. Press meat mixture into a loaf shape in a well-oiled glass baking dish. Cook for ~90 min at 375F.
5. In a small bowl, combine Siracha chili garlic sauce, remaining tomato paste and Worcestershire sauce. Use this sauce to baste the loaf every 30 min (starting 30 min into cook time). Use any left over sauce as condiment for serving.
