1 can Pink Salmon (canned, 14.75 oz)-bones removed1 cup crushed saltines1 egg (large)2 tablespoons Canola Oil (or vegetable)Salt, Pepper, Italian Seasoning if preferred
Mix canned salmon (bones removed as much as possible) with egg, salt, pepper, and italian seasoning. Once mixed, add crushed saltines. Form into patties-typically make 5 larger patties (~3 inches each) or can make into smaller patties if desired. Heat oil in skillet over medium to medium high heat. Place patties into skillet and cook on each side until golden brown/crunchy. Once brown on both sides place on paper towel to soak excess oil.
