Tuna Salad (Gerd Fighter)

Ingredients
1/4 cup olive oil1 tbl sherry 1 1/2 tsp lemon juicesalt and pepper to taste1/4 cup diced red onion1/2 pepper (optional) - diced2-3 garlic cloves, minced1/2 can black beans1/2 can corn1 can white beans1 can tuna packed in water - drained
Directions
Whisk together lemon juice, sherry, and olive oil.
Add red onion and beans, stir to mix
Add the rest, stir to combine.
Best if left to sit for at least an hour if not overnight!
