Mozzarella-Stuffed Pesto Turkey Meatballs

1 pound ground turkey, lean1/2 cup finely chopped onion2 garlic cloves, minced1 egg white1/4 cup Italian-style bread crumbs2 tablespoons shredded parmesan cheese1/2 cup chopped fresh parsley4 tablespoons fresh minced basil2 tablespoons skim milk2 low fat mozzarella sticks, cut into 16 piecessalt & pepper, to tastecooking spray
1. Preheat an oven to 375 degrees.
2. Place the ground turkey, onion, garlic, egg white, bread crumbs, Parmesan cheese, parsley, basil, milk, salt, and pepper in a bowl. Mix until evenly blended.
3. Form into 16 equal sized meatballs. Make a hole in the meatball with your finger and place a cheese slice in the hole. Seal the meatball around the cheese and place on a nonstick baking sheet sprayed with cooking spray.
4. Bake in the preheated oven until the meatballs are no longer pink in the center, about 30 minutes. Serve immediately.
