Pat's Tomato Gazpacho

32 oz.RW Knudsen Very Veggie juice (spicy)1 medium cucumber1/2 large purple onion (more or less)1 Haas avocado2 cloves garlic, minced (optional)1 medium/small zucchini (or yellow squash)1 15 oz. can diced tomatoes (or 2 fresh tomatoes)1/2 tsp. oregano1 Tbs. olive oil3 Tbs. Red Wine Vinegar (or cider vinegar)2 Tbs. lime juice
Chop cucumber, onion, and zucchini into small pieces and put in a large bowl.
Dice avocado & add to bowl with minced garlic and spices. Add all juices, stir gently, chill
