Creamy Kale Salad

Ingredients
4 cups raw kale, chopped & ribs removed1/4 cup raw red onion, diced1/4 cup dried raisins1/2 cup nonfat greek yogurt1/4 cup reduced fat mayonaise2 tsp sugar1 tsp lemon juice1 tsp lemon peel (optional)3 TBS sunflower seeds

Mix kale, red onion, and raisins in a large bowl.
Whisk yogurt, mayonnaise, sugar, lemon zest, and lemon juice together in a bowl; pour over the kale mixture and toss to coat. Refrigerate 2 hours to overnight. Sprinkle sunflower seeds over the salad and toss to serve.
