1 cup oat bran (serving is 1/3 cup (40 grams) but this recipe needs 1 cup or 120 grams)1/2 cup buckwheat flour1/8 teaspoon salt (optional)1 teaspoon baking powder1/4 cup eggbeaters4 tablespoons agave nectar1/4 cup almond coconut milk1/4 cup canola oil1/4 cup dried cranberries (like "craisins")1/4 cup chopped walnuts
Preheat oven to 375 degrees. Spray muffin pan with cooking spray. Mix dry ingredients in a mixing bowl and set aside. Mix all liquid ingredients together and stir into the dry ingredients. Fold in cranberries and walnuts. Spoon evenly into 6 muffin tins. Bake at 375 degrees for 10 - 12 minutes.
