High Protein Low Sugar Oatmeal Cookies

Ingredients
2tsp ground flaxmeal1/4 c almond milk1/3 c almond butter3 Tbsp coconut oil4 packets Stevia in the raw1/4 tsp salt1 tsp cinnamon1 tsp vanilla extract1 1/2 cups rolled oats1/4 c unsweetened coconut1/4 c dried cranberries1/4 c dried apricots, chopped
Directions
Preheat oven to 325 degrees.
Mix flax meal and almond milk. Microwave to a biol. Cool. Cream together almond butter, coconut oil, and Stevia. Add salt, vanilla, and cinnamon Mix thoroughly. Add oats and stir until combined. Stir in coconut, cranberries, and chopped apricots.
Form 1 inch balls and bake 2 inches apart on greased cookie sheet for approx 15 - 18 min.
