3 ears of corn1 red onion2 eggs1 cup flour1 tsp baking powder1 tbs olive oil
in a food processor process corn (cut off of the cob), onion and eggs. Add in flour, and taking powder
In a large nonstick skillet, heat oil in pan, and add batter, making small pancakes sized cakes.
Cook on each side until golden.
Top with fresh avocados and tomatoes and cilantro.
