turkey caprese sandwich

Ingredients
2 slices whole grain bread such as brownberry flax & fiber (80 calorie or less/slice)2 slices deli turkey (low sodium if desired)1 tsp low calorie/low fat mayo1 tsp parmesean cheese4 thick cut strips roasted red peppers (packed in water)1/2 tsp basil4 thin slices cucumber1 leaf romain lettuce4 pieces sun dried tomatoes reconstituted in hot water for 5 minutes then drained
Directions
spread mayo on each slice of bread
sprinkle mayo with basil and parmesean cheese
chop sun dried tomatoes and place on one piece of bread
layer peppers, turkey, lettuce then cucumbers
top with other slice of bread
cut sandwich in half and enjoy!
serves one

    Just had this for lunch and was very tasty! I added some baby spinach to mine. Nice, different twist to a plain turkey sandwich. I especially love the addition of the sun-dried tomatoes. - 4/21/08
