Italian Breakfast Sandwich

1 - Orowheat sandwich thin - whole wheat or grain1 - Slice Canadian bacon about 2 1/2" diameter1/2 Ounce Italian salami - your favorite1 - Slice soy cheese - I use Soy Station1/2 Cup egg substitute
Stack the Canadian bacon and salami in a medium-low preheated frying pan (I use a small 3 1/2" pan to keep things the right size). It should start to sizzle right away.
Pour in the egg substitute over the meat and cook until bottom is tan. You can add a little black pepper, curry, or any spice you like to the egg mixture. Cover with a lid to help solidify the top.
Put the sandwich thin in a toaster set at a low level or it will burn.
Flip the egg omelete over and put the cheese on top. You can turn the burner off and put the lid on to finish cooking in the hot pan, and save gas/electricity.
I add the toasted bread on top of my little omelet and recover while I pour juice, etc. That keeps the bread warm and moist.
Make your sandwich and enjoy.
