Spicy Peanut Butter Ramen Noodles with Tofu

Ingredients
2 packages Ramen noodles (without the seasoning)1 egg, scrambled and chopped1 T sesame oil1 pack extra firm tofu, patted dry and chopped into bite sized pieces1 t preminced garlic1/4 cup onions, chopped1 t Szechuan sauce2 T soy sauce3 T chunky peanut butter1 t Sriracha chili sauceGreen onion and sesame seeds, for garnish
Directions
Combine soy sauce, peanut butter and chili sauce in a small bowl and set aside.

Scramble your egg and chop it up into bite sized pieces. Set aside.

Pour sesame oil into a skillet and cook tofu until it’s beginning to brown, for about 7 – 10 minutes.

Add garlic and onions and cook for an additional 5 minutes minutes, until tofu is golden brown and cooked through.

Add egg back into the pan and pour Szechuan sauce over the mixture and let absorb for an additional 2 minutes. Set aside.

While the tofu mixture is cooking, boil noodles per the instructions on the package and drain excess water.

Toss with sauce.

Mix in egg and tofu mixture.

Serve hot and garnish with green onions and sesame seeds.
