Bisquick Crab Quiche

1 pkg. Louis Kemp Crab Delights (8 oz. flaked)3/4 c. Sargento Light Shredded Mexican Cheese4 oz. fat free cream cheese (cut into 1/4" cubes)1/4 c. green onions sliced1/2 t. salt1/2 t. basil1/2 c. Reduced Fat Bisquick1 c. skim milk1/2 c. Egg Beaters
Mix crab, shredded cheese, cream cheese, onions, salt and basil in a medium bowl. Spread mixture into the bottom of a 9" pie plate sprayed with nonstick cooking spray. Beat remaining ingredients with an electric mixer for 1 minute. Pour over crab mixture. Bake at 375 degrees for about 40-45 minutes.

This is delicious and the prep time is short, which I love! Perfect for light supper, lunch or brunch! I used fresh crab meat, italian blend of shredded cheese, and added 1/4 c of diced red bell pepper. I didn't have egg beaters, so subbed 3 large eggs. Used Gluten Free Bisquick. Done in 35 min. - 12/21/12
