4 cups watermelon, chopped 2 tablespoons chopped red onion 1 tablespoon chopped fresh mint or basilpinch salt and pepper juice of 1/2 lime1 teaspoon olive oil
Combine all ingredients in a large bowl. Refrigerate for up to four hours or serve immediately.

Good but missing something. I tweaked this a bit; eliminated the olive oil, basil, mint & salt. Added chopped celery.Then made a dressing of 5 oz. plain Greek yogurt w/ zest & juice of 1 lime and lemon and 1 tbl honey and added some cilantro (fresh in salad or 1 Tbl. tube in dressing). I used Basil as I have it in the garden. Didn't see a need for the EVOO. I will eliminate it next time around. I also grow mint so next time I will try that instead. I also used regular brown onions not red, chopped it very fine. Maybe add the feta suggested by another Sparker. - 9/4/14
