Vegetarian Cauliflower Pasta Sauce

2 tbsp olive oil 2 medium onions, diced 6 cloves garlic, chopped 2 vegan bouillon cubes 1 medium-sized cauliflower, cut into florets 3/4 cup nutritional yeast 1 cup of the cauliflower broth salt and pepper to taste
1. In a large pot of water, boil the cauliflower florets for about 15-20 minutes or until fork tender. Do not drain! Keep the broth for later
2. In a small pan, pan fry the onions, garlic, olive oil, and bouillon cubes until the onions are translucent and the garlic is fragrant.
3. Once cooked, use a slotted spoon to take out the cauliflower and puree both the cauliflower and onions in a food processor.
4. Add nutritional yeast, and broth until it reaches your desired pasta-sauce consistency (I added about 1 cup).
5. Add salt and pepper to taste
Serving Size: Yields 6-8 cups depending on the size of the cauliflower
