*Flour, white, 2 cup Oatmeal (plain), 1 cup dry Brown Sugar, 1 cup, packed *Miller's Bran, 1 tbsp *baking powder, 1 tbsp *Arm & Hammer Baking Soda, 1 tsp *Ground Ginger, .5 tsp *Ground Cinnamon, 1 tsp *Ground Cloves, 0.5 tsp *Ground Nutmeg, .5 tsp *Chocolate Chips - Decadent Semi-Sweet (PC), 5 tbsp Egg, fresh, whole, raw, 4 large *Pumpkin, cooked, boiled, drained, without salt, 1 cup, mashed Zuccini Squash, .75 cup *Olive Oil Extra Virgin (Colavita brand), 4 tbsp
Line 12 muffin cups with paper liners or grease
In large bowl, whisk together all dry ingredients,the pecans and the chocolate chips
In separate bowl, whisk together eggs, pumpkin puree, chopped/grated zuccini, oil and vanilla.
Add dry ingredients to wet and stir just until dry ingredients are moist.
Spoon into prepared muffin cups.
Sprinkle with remaining pecans.
Bake at 375 degrees F 20 to 25 minutes.
