Mushroom and Scallion Omelette

To make this scrumptious addition to your plate:1/4 cup mushrooms (diced)1/4 cup scallions (finely chopped)2 large eggs1/4 cup shredded sharp cheddar (I used block cheese to shred)1/4 tsp. garlic powderPepper to taste1 pat of salted real butter
Place veggies and seasoning in the pan with the pat of butter. Cook for about 3-4 minutes on medium heat.
Scramble your eggs into a cup.
Add cooked veggies into the cup to combine, then place back in the pan. Cook for about 2-3 minutes per side.
On the final flip, add 1/4 cup of finely shredded sharp cheddar to one half of your omelette. Flip it in half to cover the cheese (making it a half round). Cook for about a minute then it's ready for your enjoyment!
