Corn Chowder

Ingredients
4 ears fresh sweet corn, kernels removed5 small-medium potatoes, peeled and diced1 can chicken broth1 cup water1 large carrot, peeled and diced1 large shallot, peeled and diced (or 1/2 cup onion)black pepper to taste3-4 oz lean honey ham3 TBS butter1 can evaporated milk1/4 cup cream
Directions
Place the first 8 ingredients in the slow cooker. Cook on low for 7-8 hours, or on high for 3-4 hours. Mash the mixture to desired consistency, then add the butter, cream, and evaporated milk. Cook on high for another 30 minutes.
