chicken & chilli noodle salad

Ingredients
Rice noodles 100grams1 of each small red and green chilli peppersscallion 1 tbspchicken breast no skinlemon & lime juice sweetner to taste
Directions
Grill the chicken breast and chop into cubes
Finely slice and deseed the chillies then chop
Finely slice the scallion

Take 100g of rice noodles and cover with boiling water and set aside to soften then drain and refresh in cold water.

Mix the lemon and lime juice and add the chillies and scallion along with 1 tsp of sweetner

add the noodles chicken and toss to coat

serve with a large green salad
