1 tbsp coconut oil1 onion2 bay leaves1 tsp cumin2 tbsp oreganot tbsp salt2 stalks celery2 green bell peppers3 cloves garlic1/4 cup chilli paste3 cans chopped tomatoes1/4 cup chilli powder1 tbsp pepper1 can kidney beans1 can white beans1 can black eyed peas2 cans sweet corn336g buckwheat
1. heat oil in a large pot and fry onion and garlic.
2. mix the rest of beg and bay leaves, cumin, oregano and salt chilli paste and simmer for 5 minutes.
3. add everything apart from sweet corn and buckwheat. Bring to boil and simmer for 45 minutes.
4. 5 mins before the end, add sweet corn
5. cook buckwheat as per packet instructions and serve.
