Carolyn's Delicious & Healthy Beef Soup

Ingredients
4c Beef stock or beef broth2 beef bones3 medium cloves of garlic½ medium Vidalia onion1 cup of broccoli, cut into bite sized pieces½ bag of spinach2/3 cup of carrots, sliced or chopped into bite sized pieces1 medium sweet potato cut into ½” cubes½ cup baby portabella mushrooms, chopped½ bag frozen Fordhook lima beans1 medium red pepper, chopped2 large tomatoes1 small to medium squash, choppedOPTIONAL: ½ lb to 1lb stew beef, cubed into ½” cubes
Directions
1. On medium heat, pour stock or broth into large pot and add beef bones.
2. As you cut up the vegetables, add them to the broth.
3. Turn down the heat if the liquid starts to rapidly boil. You just want it at a simmer.
4. After everything is added, let it simmer for about 30-45 minutes.
5. OPTIONAL MEAT
A. Cut beef into ½” cubes
B. Sprinkle with seasoning salt or steak seasoning
C. In a fry pan brown the meat in olive oil
D. Add to the soup.
E. Simmer 45 to 60 minutes until beef is tender
