Chicken/Veg in Red Curry Sauce

Ingredients
4 5 oz chicken breast portions (no skin, boneless), sliced into stripsVeggies chopped into roughly same size pieces1 onion - rough chopped2 carrots - cut in .5" slices1/2 head of cauliflower broken into florets, those cut in half1 zucchini - cut in half long way, cut into 1 inch slices1 squash - cut into big 2 inch cubesToss all in crockpot, sprinkle with salt, garlic powder, ground ginger. Mix 1 14 oz can of light coconut milk with 1 Tbsp of Red Curry paste. Pour this mixture over chicken and veggies in crockpot.

Cover and cook on low setting 7 hours
