Itty Bitty Irish Soda Bread

1 1/2 cup whole wheat flour1/2 cup old fashioned oatmeal1 cup all purpose flour1/2 cup raisins (soaked in boiling water for 5 minutes then drained)1 TBSP baking powder1 tsp baking soda1/2 tsp salt1/3 cup brown sugar1 egg2 cups lowfat buttermilk2 TBSP melted butter
Preheat oven to 350 degrees. Spray muffin tins with cooking spray. Mix dry ingredients with drained raisins. In a second bowl mix sugar egg and buttermilk. Add wet ingredients to dry and mix until just moistened. Add butter. Using a 1/4 cup measuring cup place batter into prepared muffin pan. Bake for 15 minutes. Cool for 1 minute and remove from muffin pan. Makes 12 muffins.
