Summer quinoa salad

Ingredients
1 cup uncooked quinoa (makes 2 cups cooked)1 1/2 cup 1 cucumber (sliced and cut into ¼, cut into ½ in triangles)¾ cup 1 Red bell pepper (chopped)¾ cup 1 green bell pepper (chopped)1 ½ cup 2 fresh corn cobs (cut corn off cob after boiling for 3 min.)2 cups 1 can black beans (rinsed and drained)¾ cup 1 purple onion (diced)½ cup fresh lime juice (about 2 limes)1 tsp fresh ground black pepper ½ cup cilantro (chopped)
Directions
Prep quinoa as per packaging directions and cool.
Boil corn for 3 min. and slice or warm frozen corn and cool.
Chop all remaining vegetables and juice limes.
After first ingredients have cooled mix all ingredients together, chill and serve.
Serves 10: 1 cup servings
Can add 1 ½ cup cherry tomatoes (halved)
