Prawn and asparagus

Ingredients
200 gms peeled raw or frozen Prawns150 gms Asparagus100 gms mushrooms6 medium spring onions1 medium carrot sliced thin on the diagonal2 inch piece grated ginger3 cloves Garlic finely chopped2 tbsp Oyster Sauce1 heaped tsp Cornflour1/2 cup Water1 tbsp veg oil100 gms thinly sliced fennel
Directions
1. In a non stick pan or wok on medium heat, add the oil, garlic, and ginger and fry for 1 minute to soften
2. Turn up the heat, add Asparagus, Fennel, and carrot and stir fry for another 5 minutes
3. Add mushrooms and prawns and fry until prawns turn pink, approx 3 minutes
4. Add the oyster sauce, spring onions, and a slurry made from the water and cornflour. Stir to combine. Stir over high heat until sauce thickens.
5. Serve with Rice or a simple salad.
