Chicken Pho (non-traditional)

Ingredients
Imagine Organic Low Sodium Chicken Broth, 6 cupGarlic, 4 clove, choppedFish Sauce, 2 tbsp Ginger Root, 2 tspLemon grass (citronella), fresh, 1 tbsp, mincedChicken Breast (cooked), 8 ouncesBean sprouts, 1 cupBok Choy, raw-shreaded, 1 cup Soba Noodles, 84 grams Cilantro, raw, 6 tbsp Mushrooms, fresh, 60 grams, chopped5 Scallions (green onions), chopped
Directions
Roast chicken in oven, seasoned with salt and pepper.

While chicken is roasting, chop garlic, grate/chop ginger, mince lemon grass, shred bok choy, chop cilantro, chop mushrooms.

Cook soba noodles. When cooked, rinse under cold water.

Remove chicken from oven, and allow to cool. When cool, cut into cubes.

Combine chicken broth, fish sauce, garlic, lemon grass, and half of the chopped green onions into a pot, bring to a boil. Reduce to a simmer and cook for 10 minutes. Add noodles and chicken, cook until heated through (5 minutes).

Divide between two bowls, add remaining green onions and cilantro.

Serve.
