Crockpot Corned Beef and Cabbage

1 corned beef, 3- 4 pounds (with spice packet) used 3.5 pounds in the calorie calculation1 medium onion, cut into wedges3 pounds Yukon gold potatoes, washed and quartered4 large carrots, halved and cut into 3 inch pieces2 ribs celery, cut into pieces1 cabbage, cut into 6-8 wedges (can be cored)1 ½ cups water
Lightly spray Crockpot with pam. Layer potatoes over bottom of pot with carrots and celery. Place corned beef on vegetables. Place cabbage and onion wedges around beef. Sprinkle with the spice packet and add water. Cover and cook on LOW setting for 7-8 hours, until meat and vegetables are tender.
Remove meat to a platter, cover with foil and rest for 10 to 15 minutes before slicing.
