1 can Black Beans, rinsed & drained1 fresh Mango, peeled & cubed1/2 cup frozen corn, rinsed & drained1 can Black Olives, cut in half1/2 cup Red Onion, chopped (use to taste)1/2 Orange Bell Pepper, chopped1/2 cup (approx.) chopped fresh CilantroJuice of 1 medium sized Lime3 1/2 t. Chili Lime - Salad Jazz seasoning
Makes approx. 12 1/2 cup servings. Mix all ingredients and let chill. Serve over salad greens with a Serrano Pepper Ranch dressing topped with SW tortilla strips (optional) Top with fajita chicken strips for a full meal. Or just serve alone.
