Chicken Barley Vegetable Soup

6 c. homemade vegetable broth (no salt added)1 c. cooked pearled barley*1 can (16 oz.) Bush's Best White Beans (well rinsed)1 c. cubed chicken breast 1/2 c. baby bok choy, thinly sliced1/2 c. zucchini, coarsely chopped1/4 c. celery, finely chopped1 T. sundried tomatoes, finely chopped3/4 t. dried tarragon1/4 t. Old Bay seasoning2 t. extra virgin olive oil
Heat olive oil in pan till smoking. Add vegetables and seasonings. Sautee vegetables until almost translucent. Meanwhile, add broth, cooked barley, white beans and chicken to slow cooker. Add sautéed vegetables and seasonings to slow cooker. Cook on high for 4 hours.
