Ingredients
2 1/2 cups cauliflower riced1 cup sour cream1/2 cup grated cheddar cheese3/4 tsp salt1/4 tsp pepper
Directions
Cook 2 1/2 cups cauliflower until tender bu firm. Chop into pieces or shred with food processor to about the size of hash brown potatoes. Mix 1 cup sour cream, 1/4 cup cheddar cheese, the chopped white part of scallions, salt and pepper. Mix with the cauliflower. Place in a greased baking dish and sprinkle remaining 1/4 cup shredded cheddar cheese over the top. Bake in 350º F. oven for 20 minutes until heated through. Crumble 3 slices cooked bacon on top and sprinkle on the chopped tops of the scallions.

    I made this entirely in the microwave, chopping the cauliflower first before cooking, then using light sour cream instead of regular and dried minced onion instead of the scallions. No bacon, though. It is VERY reminiscent of Cracker Barrel's Hash Brown Casserole! - 6/12/12
