Green Olive Humus

Ingredients
1 can chick peas3 tsp minced garlic1 1/2 Tbsp lemon juice1 Tbsp balsamic vinegar20 small green olives with pimento1 Tbsp extra virgin olive oil1 Tbsp tahini1 tsp lemon zest1/2 tsp black pepper1/4 tsp paprikaSalt to tasteWater
Directions
Chop chickpeas, garlic, lemon juice and vinegar in food processor. Add olives, olive oil, tahini, lemon zest and seasonings; continue to process until all is well mixed. Test for saltiness and add salt to taste. Continue to process adding water 1 Tbsp at a time to desired consistency. Serve with crackers or pita bread.
