Buckwheat Pancakes (Joy of Cooking)

Ingredients
1 cup buckwheat flour 1 cup all-purpose or whole wheat flour 2 tablespoons sugar 1 teaspoon baking soda 1 teaspoon salt 2 cups buttermilk 1⁄4 cup (1⁄2 stick) butter,melted 2 egg yolks2 egg whites
Directions
About eighteen 4-inch pancakes

Whisk dry ingredients together in a large bowl

Mix wet ingredients in a separate bowl. Pour the wet ingredients over the dry ingredients and combine with a few quick strokes of the whisk, leaving the batter slightly lumpy.

Whisk the egg whites until stiff but not dry. Fold into batter just until blended.
