Primal Pumpkin Chocolate Chip Muffins

Ingredients
1 cup pumpkin puree (not sweetened).5 cup maple syrup.33 cup melted coconut oil6 pasture eggs, whisked2 teaspoon vanilla extract1/2 cup coconut flour2.5 tsp Pumpkin PIe Spice 1 teaspoon baking soda1 teaspoon baking powderpinch of salt1/2 cup Chocolate Chips
Directions
Preheat oven to 350 degrees.

Mix together wet ingredients in a bowl: pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.

In another bowl, whisk together coconut flour, pumpkin pie spice, baking soda, baking powder, and salt.

Pour dry ingredients into wet ingredients and mix well.
Fold in chocolate chips.

Line a muffin tin with paper liners. Divide into 12 equal muffins, then sprinkle with a little brown sugar (not included in nutrition calculation).

Bake for 35-40 minutes

    I left out the chocolate chips, but they were delicious and satisfying anyway. I added coarsely chopped pecans to half the batter (about 8 pecan halves) for me, and left the rest plain for DH. He loved them. Commented on how moist they are. I will definitely make these again. - 2/22/15
