Fennel Apple Salad

1 small fennel bulb (trimmed and thinly sliced)2 granny smith apples (cored and thinly sliced)1 small head radicchio (bottom trimmed, thinly sliced)1 teaspoon orange zest.25 Cup orange juice.25 Cup Olive oil2 Tablespoon lemon juice2 Teaspoon Dijon mustardPinch sea salt and pepper to taste
In a large bowl combine fennel, apple slices, and radicchio. Make the dressing: In a small jar with a tight-fitting lid, combine orange zest, orange juice, olive oil, lemon juice, mustard, sea salt, and pepper. Shake jar vigorously to combine. Pour desired amount of dressing over salad and toss to coat. Serve immediately.
