Thai Seitan Shepherd's Pie

*1 TBSP olive oil*3 cups Mir Pois (chopped onion, carrots, and celery)*1 cup frozen peas*1 package seitan "chicken" strips*16 TBSP Thai peanut sauce*5 ⅓ cups mashed potatoes (prepared)
1. Pre-heat oven to 350 degrees F. Saute mir pois and peas with olive oil, until just soft.
2. Add seitan strips and combine with veggies until warm. Mix in peanut sauce until well-combined.
3. Divide vegetable/seitan mixture into single-serving dishes. Spread mashed potatoes on top of each serving.
4. Bake for 20 minutes, or until toasted on top.
Serving Size: Makes 8 single-serving pot pies.
