Chicken Cacciatori

1 T olive oil2 cups sliced onions4 oz. fresh mushroom slices1 3 lb. broiler/fryer chicken cut into 6-8 pieces, remove skin1-28 oz. can crushed tomatoes3 cloves garlic, crushed2 tsp. dried oregano1 T. dried basil1 tsp. salt
In a large non-stick skillet, heat olive oil. Put onions and mushrooms in oil and saute for a few minutes until they become soft. Put in crockpot.
Lay chicken pieces over onion then add crushed tomatoes, crushed garlic, oregano, basil and salt. Give it all a good stir.
Cook 5-6 hours on low or until chicken is tender.
OR
Saute onions and mushrooms in a large stockpot, add other ingredients and simmer on the stovetop for 45 minutes to an hour.
Serve with your favorite rice or pasta.
