French onion soup

3 tbsp unsalted butter6 yellow onions (medium size), thinly chopped6 shallots, thinly chopped4 garlic cloves, chopped3/4 cup port wine or red wine8 cups beef broth2 tsp fresh thyme, chopped3 bay leaves6 pieces of bread (French baguette)2 cups gruyere cheese, shredded
Cook the onions, shallots and garlic in the butter until golden (takes approximately 30 minutes)
Add the wine, scrape up all the particles.
Add the bay leaves, thyme and beef broth. Bring to boil and let simmer for 30 minutes.
Pour in 6 bowls (oven-proof), place a piece of bread (previously toasted - lightly) on the soup and add cheese.
Place the bowls in the oven and broil until the cheese is melted and grilled a bit.
