Fragrant Beans and Chicken

Ingredients
Olive oilOnionCeleryCarrotsPlum tomatoesGarlicRed bell pepperWhite beans - 29 oz. can (cannellini or navy work well) Salt and pepperCuminParsleyThymeChicken drumsticks, skin removed
Directions
Pour 1 teaspoon of olive oil into slow cooker.

Chop garlic clove, and dice vegetables; drain the canned beans. Peel and chop tomatoes.

Add all ingredients except chicken to olive oil.
Combine salt, black pepper, cumin, chopped parsley and thyme. Sprinkle about 1/4 tsp. of this mixture over the chicken and set chicken aside.

Stir remaining seasoning mixture into bean mixture.

Arrange the drumsticks on top of the beans and vegetables. Cover.

Cook on Medium heat for 3 hours.

Check chicken for doneness before serving.


Serving Size: Makes 6 servings: One drumstick and approx 3/4 cup (or 1/6th) of bean and veggie mixture.
