Gluten Free Pumpkin Muffins

Ingredients
1 cup pumpkin puree3/4 cup oat flour (or about a cup of oats processed into a fine flour to make 3/4 cup)1 1/3 cup egg whites1 tbsp baking powder2 tsp pumpkin pie spice1 tsp vanilla flavoring1/4 cup of packed brown sugarGlaze1/4 cup of maple or butter flavored syrup2 tbsp peanut butterdash of cinnamon
Directions
Preheat oven to 375 degrees F.

Mix together all the dry ingredients and make a well in the center. Add the egg whites and vanilla to the center and fold ingredients together. Add mixture to muffin cups, you should have about 6 regular sized muffins.

Bake 10-15 mins

While these are baking, mix the Glaze together. When the muffins are cool, spread glaze on the top and serve.
