Chinese-Style Oxtail

2.5 lbs oxtail, cut into pieceskosher salt and freshly ground pepper1/2 cup dry sherry1/2 cup low sodium soy sauce1 1/2 Tbsp dark brown sugar1 star anise, broken apart1/2 cup chopped onion1 Tbsp ginger paste2 Tbsp garlic paste 1 lemon, peel and juice
Place oxtail in crockpot and season with salt and pepper on both sides. Pour in all ingredients except lemon. Peel lemon and put peel in sauce. Squeeze lemon juice on oxtail. Set crock pot to high and turn oxtail occastionally for 4 hours. Turn crockpot to low and cook for another 4 hours.

I made it last night and like very much. I will make it again. I think the portions for both entries are too large but can't find oxtail in the nutrient listings I use in order to recalculate the nutrients. I had a slightly smaller amount of oxtail and I added baby carrots so must estimate. - 3/11/09
