Vegan Coconut Nut Bars

Dry1.25 cup oats, ground into flour0.25 cup oats, whole0.25 cup raw almonds, chopped0.25 cup raw cashews, chopped0.25 cup sunflower seeds0.25 cup protein powder (I used pumpkin seed)Wet1.5 cup dates (soak them if they are tough)0.25 cup peanut butter6 tbsp coconut butter3-5 tbsp water2 tsp vanilla extractTopping0.25 cup shredded coconut, toasted or raw
1) Mix the dry ingredients in a medium sized bowl.
2) Place all wet ingredients in the blender and blend for 4 minutes, stopping to scrape the sides. A thick paste will form.
3) Spoon the paste into the dry ingredients and combine, stirring forcefully until all of the dry ingredients are incorporated. This may take a few minutes.
4) Spoon the dough into an 8x8 pan, smoothing it out evenly. Sprinkle on the shredded coconut and press into the dough.
5) Place in the freezer for 1 hour before cutting into bars.
Serving Size: Makes 17-20 squares
