Not-So-Traditional Irish Apple Cinnamon Cake

- 1/4 cup Applesauce, Unsweetened- 1/3cup Sugar (granulated)- 1 1/2 cups All-Purpose Flour- 1 1/2teaspoons Baking Powder- 1 teaspoon Cinnamon- 1 Whole Egg (room temperature)- 2 Egg Whites (room temperature)- 2 tablespoons Fat Free Milk- 3 Apples, medium (peeled, cored, quartered, and pieced)Optional topping:- 1 tablespoon Raisins- 2 tablespoons Powder Sugar- 1/2 tablespoon Cinnamon
Preheat oven to 350°F.
Grease an 8x8 round cake pan with a non-stick cooking spray. (I used Pam.)
Combine flour, cinnamon, and baking powder into a small bowl. Set aside.
In a larger bowl, mix together applesauce and sugar until they are completely combined. Beat one egg into applesauce mixture and then add a tablespoon of the flour mixture. Follow this egg-flour process with the remaining two eggs, and then fold in roughly two thirds of the flour mixture. Stir in the milk and then fold in the last of the flour mixture.
The mixture will appear much like a wet bread dough. If not wet enough, add another splash of milk or water. Spread half of the cake batter on the bottom of the pan. You will probably have to use your hands to manually spread out the dough, much like bread dough.
Distribute the apple pieces evenly over the batter in the pan. Cover the apples with the rest of the batter. If desired, add raisins on top. Bake for 15 minutes. Reduce the oven temperature to 325°F and continue baking for another 30 minutes, or until golden brown and firm to the touch.
If desired, add cinnamon and powdered sugar before serving.
