Asian-Inspired Lemon Chicken Soup

Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces1 tablespoon sliced garlic1/2 tablespoon minced fresh ginger1/4 cup chili garlic sauce1/3 cup freshly squeezed lemon juice*1 cup sliced carrots1 pint grape tomatoes1/4 cup tomato paste6 cups well-seasoned chicken broth1 cup fresh spinachlemon slicesblack pepper to taste
Directions
1. Place chicken, garlic, ginger, chili garlic sauce, lemon juice, carrots, tomatoes, tomato paste and chicken broth in a 3 1/2 quart slow cooker. Cover pot and cook on low 5 hours.
2. Add spinach and cook an additional 10 minutes.
3. To serve, garnish with lemon slices and season with freshly ground black pepper.
