Carrot Coconut Curry Soup

Ingredients
2 pounds of carrots1 onion, chopped2 cloves garlic1 can lite coconut milk.5 cup stock.5 cup watercurry powderfresh gingersalt/pepperadditional milk to thin (coconut or regular)
Directions
Saute onion and garlic. Add spices. Add milk, carrots, stock and water. Boil until carrots are tender. Pruee in blender. Add additional water, stock, or milk to thin. Salt and pepper to taste.
